Brazilian Oven Cheese Bread Quiches
Separate 6 Traditional Cheese Bread rolls from the package, put in a Ziploc bag and put in the fridge until soft, about 3 hours. Do not let it at room temperature, safety first. You can also do it overnight if you are planning to have it for breakfast.
In a bowl, beat 2 eggs, add 1/4 cup of milk or heavy cream for a creamier texture, add salt and pepper to taste. Now it is the fun part, add anything that you like to the egg mixture: cheese of your preference, crumbled bacon, diced ham, cooked sausage, diced veggies, spinach, chopped onion or scallions... Make sure the total filings you add to the egg mixture equals to 1 cup. (e.g. 1/2 cup cheese and 1/2 cup of diced ham)
Spray the bottom of 6 muffin pan cups. Press the Cheese Bread on each cup until it spreads around the bottom. Divided the egg mixture among each crust-lined cup.
Bake 18 to 20 minutes at 400 F. until puffed and golden brown.

Brazilian Oven Cheese Bread with Hot Buffalo Chicken Dip
You can Use Traditional, Garlic or even Rosemary Cheese Bread for this recipe
Hot Buffalo Chicken Dip

Ingredients:
2 cups shredded seasoned chicken
4 oz. cream cheese
½ cup ranch dressing
½ cup Franks red hot
¼ cup bleu cheese
½ cup cheddar cheese
Take half of the chicken put it in the food processor with cream cheese, ranch dressing, and hot sauce; pulse until almost pureed. Mix in the rest of the chicken.
In a shallow pan, layer chicken mix, bleu cheese crumbles, 1/2 of the cheddar chicken mix then top with cheddar (I like to put extra cheese on top myself).
Pop both in the oven, Cheese Bread on the top rack and Chicken dip bottom rack @ 400 F. for approx 20 minutes.

Brazilian Oven Cheese Bread with Eggplant Caviar
Eggplant Caviar
1 Large eggplant (about 10 oz)
2 Large garlic cloves
1 Tablespoon of fresh lemon juice
1 Tablespoon olive oil
1 Tablespoon diced fresh parsley
1 Teaspoon kosher salt
Preheat oven to 450 F. Make 3 cuts lengthwise on the eggplant, so it will not burst while roasting. Place the garlic cloves in a piece of aluminum foil, drizzle with a ½ teaspoon of olive oil and fold the aluminum foil to protect the garlic. Place both garlic and eggplant in the oven for 40 minutes.
Remove from the oven, wait until eggplant and garlic are cooled enough to handle. Peel eggplant, with a fork, mash it to a coarse texture. Peel the garlic cloves and put them in a food processor with half of the mashed eggplant. Then, mix the pureed eggplant and garlic with the other half mashed eggplant; add the lemon juice, olive oil, parsley, and salt. Stir until combined.
Serve cold or at room temperature

Brazilian Oven Twisted Cinnamon Rolls
Separate 12 Traditional Cheese Bread rolls from the package, put in a Ziploc bag and put in the fridge until soft, about 3 hours. Do not let it at room temperature, safety first. You can also do it overnight if you are planning to have it for breakfast.
In a bowl, mix 2 Tablespoons of sugar and 1 Teaspoon of ground cinnamon. Reshape the Cheese Bread as balls and roll them in the cinnamon and sugar mixture. Place them in a lightly greased baking pan and bake for 13 to 15 minutes at 400 F. Delicious by itself or can be served with White Chocolate Frosting.
White Chocolate Frosting:
1/2 cup heavy whipping cream
50 g white chocolate
1/2 cup Mascarpone or cream cheese
Simmer the heavy whipping cream, add the white chocolate, turn the heat off and stir until the chocolate is all melted and incorporated.
Add the Mascarpone or cream cheese and mix well. Can be served at room temperature or chilled.
